Some general tips

For many fruits, especially the softer types, their appealing lustre or sweet aroma tells you exactly when they’re at the peak of perfection. If you’re not going to use the fruit right away, store ripe fruit in the refrigerator. And store different varieties in separate bags or containers, as storing them together encourages spoiling. Note: with the exception of apples or pears, if fruit not ripe to your liking, ripen before placing into refrigerator.

Quick guide to ripening fruit

Most fruits are picked at optimum maturity; you may prefer to ripen further. Choose a spot—away from direct sunlight—that stays at moderate room temperature. Place fruit in paper bags—not plastic, which would trap moisture and cause spoilage. Choose a fruit from the list on the left to find out the best method for each type.

Washing fruit

Don't wash fruit prior to storing it! Washing will strip away some of the natural protections in the skins that allow the fruit to store longer. Once you are ready to eat the fruit, wash it under clean running water—even if you won't be eating the fruit's skin. Adding soap is not recommended. (For additional cleaning, some consumers like to use a soft brush while rinsing apples; making sure to include the stem and blossom “dimples.”)
