This could become your signature salad dressing! It's delicious over a mixed green salad with apples and walnuts.
Makes 1 Cup
3 slices bacon
1/4 cup (60 mL) onion, chopped finely
1 B.C. Brand apple, peeled, chopped
1/2 cup (125 mL) apple juice
1 Tbsp (15 mL) apple cider vinegar
1 tsp (5 mL) Dijon mustard
1 tsp (5 mL) honey, optional, to taste
1. Cook bacon in medium frying pan. Remove bacon and set aside, Reserve drippings (about 2 Tbsp).
2. Add onion to the pan with drippings and saute over medium heat for about 3 minutes. Add apple and continue to cook until soft.
3. Chop reserved bacon slices and return to pan with apple mixture.
4. Remove from heat and transfer to a blender or food processor. Add all remaining ingredients and blend until smooth.
5. Drizzle over summer salads or a grilled vegetable platter. Keep extra dressing in the fridge and use within 5 days.
