A rare find in a dessert, this one contains vitamins and fibre!
Serves 6
6 Spartan apples
2 tablespoons (30 ml) honey
1 cup (250 ml) crushed ginger snap cookies
1/2 cup (125 ml) orange juice
1/2 cup (125 ml) water
Wash and dry apples, remove cores but not quite to the bottom of the apple, leaving a base. Poke the apple skins with a fork in a few places. Set aside.
Blend honey and crushed ginger snaps and stuff into apples. Then blend the orange juice and water together. Arrange stuffed apples in a baking dish, pour the liquid over the apples.
Bake in a preheated 400° F (200° C) oven for 45 minutes, or until apples are tender.
