Warm Apple Bread Pudding

Bake in one large casserole dish or for entertaining, make in individual ramekins garnished with whipped cream, cinnamon and a thin fresh apple slice.
Makes 8 Servings

2 cups (500 mL) apples, peeled and diced finely
2 Tbsp (30 mL) butter
8-10 slices day old bread, raisin bread or croissants*
2 1/2 cups (625 mL) milk
3 eggs
1/3 cup (80 mL) granulated sugar
1 tsp (5 mL) vanilla
1 tsp (5 mL) cinnamon
1/4 tsp (1 mL) salt
*Using croissants or flaky rolls will give pudding a lighter texture.

1. Lightly mist a 10-cup casserole dish or baking pan with cooking oil spray. (Or 8 individual ramekins if using.)
2. Spread each bread slice with butter on both sides. Slice bread into 1 inch (2.5 cm) cubes and place in casserole dish. Stir in diced apples.
3. In a bowl, whisk milk, eggs, sugar, vanilla, cinnamon and salt. Pour over bread and apple mixture.
4. Bake for 50-60 minutes at 350°F (180°C) or until egg custard is set and top is golden brown. Individual dishes will require less baking time
