Try this easy casserole for a new breakfast idea.
Serves 4 to 6.
4 whole eggs
1/2 cup (125 ml) flour
1 teaspoon (5 ml) baking powder
1/4 teaspoon (1.25 ml) salt
1/2 cup (125 ml) milk
2 tablespoons (30 ml) rum
2 tablespoons (30 ml) melted butter
3 apples, peeled, cored and sliced
2 tablespoons (30 ml) granulated sugar
1 tablespoon (15 ml) cinnamon
2 egg whites, beaten firm
1 tablespoon (15 ml) brown sugar
Place whole eggs in bowl and mix with whisk. Sift flour, baking powder and salt together. Add to beaten whole eggs and mix well. Incorporate milk and rum. Refrigerate 1 hour.
Preheat oven to 375° F (190° C). Heat butter in frying pan over medium heat. Add apples, granulated sugar and cinnamon. Cook 12 minutes.
Remove batter from refrigerator and incorporate beaten egg whites using spatula. Pour mixture into round buttered baking dish. Arrange apple slices in centre of dish. Sprinkle with brown sugar and bake 45 minutes in oven.
