Basil and Feta Apple Pizza

A new and healthy variation of an old favorite.
Makes 4 Servings

1 12" thin crust pizza shell or 2 7" shells
1 5 ounce (75 gram) chicken breast, cooked and cut into strips
1 small white onion, thinly sliced into rings
1 cup (250 ml) fresh mushrooms, thinly sliced
2 Spartan apples, unpeeled, quartered and thinly sliced
1 tablespoon (15 ml) canola oil
1/2 cup (125 ml) tomato sauce
1/2 cup (125 ml) crumbled feta cheese (plain or tomato-basil flavored)
1/3 cup (80 ml) fresh basil, chopped

Preheat oven to 400 degrees C. Heat oil in saucepan. Add onion, mushroom and apple slices and sauté for 3-5 minutes or until soft and golden. Remove from heat. Spread crust with tomato sauce. Cover with sautéed mix. Top with chicken slices, feta and basil. Bake for 12-15 minutes.

Served alone for 2, this pizza makes a well-balanced meal. If preferred, serve for 4 with a side salad. Cut into mini-slices, it makes for an impressive appetizer.
