Apple and Cheese Treats

These tasty appetizers look like a gourmet cheese ball or truffle. But instead of finding a rich filling, your guests will enjoy a crisp bite-sized apple.

3 large B.C. Brand apples
juice of 1/2 a fresh lemon
1/2 package (4 ounces) of light cream cheese
2 tablespoons (30 ml) SunRype orange juice
2 tablespoons (30 ml) plain yogurt
1 cup (250 ml) coarsely chopped nuts

In bowl, combine cream cheese with juice and yogurt until smooth. Set aside. Using blender or food processor, crush nuts to desired consistency. Set aside.

Cut apples in half. Without peeling or removing core, use melon baller on inside of apple to make approximately 12 balls per apple. Immediately toss with fresh lemon juice to prevent browning.

Immediately, dip each apple ball in cheese mixture, then roll in nuts to coat. Place on tray in fridge for at least 30 minutes to set. Keeps well in fridge for up to 12 hours.

Makes up to 35 appetizers.
