This colorful salad is full of fibre and nutrients. The tangy, lower fat dressing makes it lighter than a traditional coleslaw. Makes a nice accompaniment to a sandwich for a quick lunch.
Makes 8-1 cup servings.
3 cups (750 ml) green cabbage (1/2 small head), chopped
3 cups (750 ml) red cabbage (1/2 small head), chopped
2 B.C Brand apples, coarsely grated
1 cup (250 ml) carrots, grated
1/2 cup (125 ml) fresh parsley, chopped
2 green onions, chopped
In a large salad bowl, toss all of the above ingredients together. Coat with dressing as per below.
Dressing
1/3 cup (80 ml) fat-reduced mayonnaise
2 tsps (10 ml) honey
1/4 cup (60 ml) Sun-Rype apple juice
1 tsp (5 ml) rice vinegar
1 tsp (5 ml) poppy seeds
Per serving: 296 calories (1243 kJ), 54.5 g carbohydrate, 10.6 g protein, 6 g fat.
