Curried Apple Rice Pilaf

Can be served warm as a side to roasted chicken or cold with chopped chicken on top!
Serves 6.

2 tbsp (30 ml) butter
2 cups (500 ml) apples, unpeeled, diced
Juice of 1 lemon
1 cup (250 ml) brown and wild rice, uncooked
1 medium onion, chopped
2 1/4 cups (580 ml) chicken broth
1 1/2 tsp (7.5 ml) curry powder
1/4 cup (80 ml) slivered almonds, toasted

Heat 1 tablespoon butter in saucepan. Add apples and half the lemon juice. Sautee on high heat for just 2 minutes. Set aside.

Heat remaining tablespoon of butter, rice and onion for 5 minutes or until golden. Add chicken broth and curry powder. Stir. Cover and cook over low heat for 40 minutes. Stir in apples and almonds. Serve.

Per serving: 272 Calories , Carbohydrate 38 g (53%), Protein 7 g (10%), Fat 11.3 g (37%). Suitable for low fat, heart healthy diets and diabetic diets.
