Apple Date Squares

Cooked mashed apples combine with the dates to make these squares extra moist and delicious.
Makes 8-12 Squares

1 1/2 cups (375 mL) pitted dates
3/4 cup (175 mL) water
2 apples, peeled and coarsely grated
1 1/2 cups (375 mL) whole wheat flour
1 1/2 cups (375 mL) quick oats
3/4 cup (175 mL) brown sugar
2 tsp (10 mL) cinnamon
3/4 cup (175 mL) butter

1. In a medium saucepan, combine the dates and water and bring to a boil. Reduce the heat and mash dates. Remove from heat and stir in apples.
2. Preheat oven to 350°F (175°C). Prepare an 8x8 inch square pan by greasing or with parchment paper.
3. In medium bowl, combine flour, oats, sugar and cinnamon. Cut in the butter to form a crumbly mixture.
4. Spread half of the flour mixture into the pan. Top with the apple-date mix. Cover with the remaining flour mixture. Pat down.
5. Bake for 30 minutes.
6. Cool and cut into squares.
