Apple Filling

Keep in the Freezer Apple Filling
Makes 8 Servings

6 cups (1.5 L)apples, peeled and sliced
1/2 cup (125 mL)granulated sugar*
2 Tbsp (30 mL) minute tapioca
1 Tbsp (15 mL) freshly squeezed lemon juice
1/2 tsp (2.5 mL) cinnamon

*Use less sugar if apples are a sweeter variety. Slightly more sugar if a tart variety.

1. In large saucepan, combine apples, sugar, tapioca, and lemon juice. Bring to a boil over medium heat. Boil hard for 1 minute. Add cinnamon and boil for one additional minute. Cool.
2. Put in containers and freeze.
3. To use: Thaw and put into pie or tart shells or crisps. Bake at 350° F (180°C) until done or per recipe instructions.
