Apple Fruit Stew with Vanilla Essence

Enjoy this fruit stew warm or cold topped with French vanilla yogurt as a breakfast, snack or even dessert!
Makes 6-7 Servings

1/2 cup (125 mL) dried apricots
1/2 cup (60 mL) golden raisins
1/2 cup (125 mL) prunes
1/2 cup (60 mL) dried apples
4 cups (1 L) water
1/4 cup (60 mL) brown sugar
1/2 vanilla bean, sliced open lengthwise
1 cinnamon stick
2 orange slices (circular)
2 B.C. Brand apples, peeled, chopped

1. Leave dried fruit whole and place all ingredients except fresh apples in a large saucepan. Bring to a boil, reduce heat, cover and simmer for about 20 minutes.
2. Remove fruit with a slotted spoon to large bowl.
3. Bring remaining liquid (along with vanilla bean, cinnamon stick and orange slices) back to a boil for about 10 minutes or until liquid is reduced and approximately 1 cup remains.
4. Remove vanilla bean, cinnamon stick and orange slices.
5. Add apples to liquid and cook for an additional 4-5 minutes. Stir in dried fruit mixture. Serve warm or cold on it's own or topped with yogurt and toasted nuts.
