Apple and Melon Ball Salad

Missing the bounty of summer fruit? This salad looks and tastes as fresh as any you've had in summer, but is made with fresh fruit available through the Fall and Winter months.

3 large, unpeeled B.C. Brand apples
juice of 1/2 a fresh lemon
1/2 cantaloupe, seeds removed
1 cup (250 ml) seedless red grapes, cut in half
2 kiwi fruit, peeled and chopped
1 tbsp (15 ml) sugar

Place lemon juice in large mixing bowl. Cut apples in half. Without removing core, use melon baller on flesh to make 10-12 balls per apple. Immediately toss apple balls in lemon juice. Prepare canteloupe balls and add to apples. Add grapes and kiwi fruit. Sprinkle with sugar and toss well. Ready to serve.

Per serving: 144 calories(602 kJ), 36.2 g carbohydrate(90%), 1.5 g protein(4%), 1 g fat(6%). Suitable for heart smart, low fat and diabetic diets.
