Valentine's Apple Pancake Puff

Although a standard round cake pan can be used to bake this puff, baking it in a heart-shaped pan makes it extra special for a Valentine's treat. If desired, top with a red sauce made of strawberries or raspberries for added seasonal appeal.
Makes 4 Servings

1/4 cup (60 mL) brown sugar, packed
1/4 cup (60 mL) butter
2 apples, cored, peeled if desired and sliced in very thin slices or rings (peaches also work well)
2 eggs
1 cup (250 mL) milk
1 Tbsp (15 mL) canola oil
1 cup (250 mL) all purpose flour
1 Tbsp (15 mL) flax seed, ground
1 Tbsp (15 mL) white sugar
2 tsp (10 mL) baking powder
1 tsp (5 mL) cinnamon
pinch salt

1. Preheat oven to 375°F (190°C). Prepare pan by lining with parchment paper or greasing well.
2. Microwave brown sugar and butter to melt. Pour into bottom of pan.
3. Arrange apple slices or rings decoratively over the brown sugar mixture.
4. Whisk egg, milk and oil. In separate bowl, mix flour, sugar, baking powder, flax seed and salt. Add dry ingredients to wet and mix well.
5. Pour batter carefully over apples.
6. Bake for 35-40 minutes or until slightly golden and cooked through.
