3 cups (750 ml) cooked red baby nugget potatoes, whole or cut into chunks
2 apples, unpeeled, cut into large chunks
2 tbsp (30 ml) fresh lemon juice
2 tbsp (30 ml) light mayonnaise
1 tbsp (15 ml) grainy mustard
1/3 cup (80 ml) fresh parsley, chopped
1/3 cup (80 ml) fresh dill, chopped
2 tbsp (30 ml) feta cheese, crumbled (optional)
Combine all ingredients in a bowl. Cool and store in fridge until ready to serve.
