Sherry Poached Apples

An easy to prepare, yet elegant finish to a gourmet meal.
Makes 4 Servings

4 medium cooking apples
2/3 cup (160 ml) apple juice
1/4 cup (60 ml) raisins
1/4 cup (60 ml) dry sherry
1 stick cinnamon
1 teaspoon (5 ml) finely shredded lemon rind

Core apples. Peel off a strip around the top of each apple. Combine apple juice, raisins, sherry, cinnamon and lemon rind in medium skillet. Bring to boil. Add apples, reduce heat, cover and simmer for 10 minutes, occasionally spooning sherry mixture over apples. Turn apples over; cover and simmer for 3 to 5 minutes more or until tender. Remove cinnamon stick. Serve warm. Spoon sherry mixture over apples, if desired.
