Apple and Bacon Stuffed Mushrooms

These easy to make appetizers are impressive and perfect for holiday entertaining.
Makes 24 Appetizers

24 medium-sized mushrooms
1 Tbsp (15 mL) canola oil
1/2 cup (125 mL) onion, finely chopped
7 pieces bacon, cooked and crumbled
2 apples (peeled or not), coarsely grated
1/2 cup (125 mL) bread crumbs
1/2 cup (125 mL) Parmesan cheese, freshly grated

1. To give mushrooms a richer flavour while making them less watery, roast the mushrooms before stuffing. To do so, clean mushrooms, remove stems and place stem side down on a baking pan lined with parchment paper. Bake at 350° F (180° C) for 15-20 minutes. Remove from heat and allow to cool.
2. Meanwhile, place oil in saucepan over medium heat. Add onions and sauté until soft, about 5 minutes. Remove from heat.
3. In large bowl, combine cooked onion with bacon, apple and breadcrumbs. 4. Spoon into mushrooms and sprinkle each with Parmesan cheese. 5. Bake at 350° F (180° C) for 15-20 minutes.
