Red Delicious Apple-Stuffed Squash

Winter varieties of squash are among the richest sources of potassium. Combined with apples, this dish is a great source of fibre.
Serves 4.

1 small buttercup squash (approx. 1 lb.)
1 cup (250 ml) chopped Red Delicious apples
2 tablespoons (30 ml) brown sugar
2 tablespoons (30 ml) butter or margarine
1 teaspoon (5 ml) lemon juice
dash of nutmeg

Cut squash into quarters, remove seeds and fibers. Place squash pieces, skin side down in a shallow baking dish. Mix remaining ingredients together and spoon into centre of squash.

Cover with wax paper and microwave on high (550 watts) for 5 minutes. Turn baking dish during cooking to ensure even cooking. When squash is tender, spoon juices over top and serve.

Per serving: 156 calories(653 kJ), 26.9 g carbohydrate (61%), 1.3 g protein(3%), 6.3 g fat(36%). This recipe is suitable for diabetic diets.
