For those who run out of time or prefer not to stuff the bird, this tasty accompaniment can be made on the stove while the meat roasts.
Serves 6.
1/2 cup (125 ml) celery, chopped
1/2 cup (125 ml) onion, chopped
1/3 cup (80 ml) fresh parsley, chopped
2 tbsp (30 ml) canola oil
5 B.C. Brand apples, unpeeled and diced
1/4 cup (60 ml) sugar
1 cup (250 ml) coarse bread crumbs
Salt, pepper and poultry seasoning
In large saucepan at medium heat, sautee celery, onion and parsley in 1 tablespoon oil. Remove from pan and set aside. Using remaining oil, cook apples and sugar, covered, until tender. Remove cover and cook until apples are candied. Add vegetables, bread crumbs and seasonings as desired. Serve as an accompaniment to pork, lamb or poultry.
