A wonderfully fresh tasting accompaniment to sandwiches or summertime fare.
Makes 8 cups.
2 cups (500 ml) cous cous, cooked and cooled
2 bunches of fresh parsley, finely chopped
1 bunch of green onions, finely chopped
2 apples, unpeeled and coarsely grated
Juice of 2 lemons
1 tsp (5 ml) salt
1 tbsp (15 ml) sugar
Combine cous cous, parsley and green onions in large bowl. Prepare apples and combine with lemon juice. Add to cous cous mixture. Season with salt and sugar. Store in refrigerator until serving.
Per 1 cup serving: 92 calories; 20.7 g carbohydrate (85%); 2.6 g protein (11%), 0.3 g fat (4%). Suitable for low fat, heart health and diabetic diets.
