Curried Apple and Shrimp Wraps
A wonderful way to jazz up lunch. This is no boring sandwich!
Serves 6
1 ripe mango, peeled and chopped
1/4 c. (60 ml) light mayonnaise
1 shallot, peeled
6-8 drops hot sauce
1 1/2 tsp (3 ml) curry powder
1/2 lb. (250 g) cooked shrimp
2 Spartan apples, unpeeled and diced
1 avocado
2 tbsp (30 ml) fresh lemon juice
6 9" (23 cm) tortilla wraps
In blender or food processor, combine mango chunks, mayonnaise, shallot, hot sauce and curry powder until smooth. In large bowl, combine shrimp and apples. Add mango curry sauce and toss until well mixed. Mash avocado and lemon juice. Spread on wraps. Spoon in curried apple mix and roll to seal. Cut in half diagonally to serve.
Note: Refrigerating for up to 2 hours before serving, makes the wraps more stable.
