A wonderful low fat alternative to regular butter.
Makes 4 cups.
4 pounds Newtown (AKA Pippins) or other tart apples, quartered with skins and stems
2 cups (500 ml) apple cider
4 cups (1 L) sugar
3 teaspoons (15 ml) cinnamon
2 teaspoons (10 ml) ground cloves
1 teaspoon (5 ml) allspice
Combine apples with cider in a large, heavy saucepan. Bring to a simmer over medium heat, continue simmering for 25 minutes. Stir occasionally to make sure apples do not stick.
Once the apples are soft, pass them through a food mill placed over a large bowl. Add the sugar and spices to the apples. Taste for sweetness. Add more sugar if desired. Place apple mixture back on stove set at low heat for 4 hours, stirring frequently to avoid scorching.
When the mixture thickens and no liquid separates around the edge, the apple butter is finished cooking. Proceed with canning, according to manufacturer's directions, or cover tightly and keep refrigerated for up to 3 weeks.
