Turkey Apple Meatloaf

Accompany this meal with sweet potatoes and Brussel sprouts for all of the delicious flavours of traditional turkey dinner.
Makes 6 Servings

1 package, instant stuffing mix, prepared and cooled
1 lb (500 g) ground turkey
1/2 cup (125 mL) chopped onion
2 apples, unpeeled, grated
1/3 cup (80 mL) rolled oats
1 egg
3 Tbsp (45 mL) grainy Dijon mustard
1 tsp (5 mL) salt
1/2 tsp (2.5 mL) coarsely ground black pepper

1. Preheat oven to 375°F (190°C ).
2. Spray a 9" x 5" (23 x 13 cm) loaf pan with cooking oil spray.
3. Press the cooled stuffing evenly into the bottom of the pan.
4. In large mixing bowl, combine remaining ingredients and add to loaf pan, pressing down so top of loaf is flat.
5. Bake for about 45 minutes or until thermometer inserted into the centre reads 175°F (80°C). Allow to rest a few minutes the turn out of pan so stuffing is on the top.
