Ingredients


  • 1 cup (250 ml) pumpkin puree
  • 1 1/4 cups (310 ml) granulated sugar
  • 1/3 cup (80 ml) vegetable oil
  • 1/3 cup (80 ml) water
  • 2 eggs
  • 2 cups (500 ml) all purpose flour
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (2.5 ml) salt
  • 1/2 tsp (2.5 ml) cinnamon
  • 2 apples, coarsely grated

Directions


  • STEP 1

    In a large bowl, combine first five ingredients. Beat for 2 minutes at medium speed.

  • STEP 2

    In separate bowl, combine dry ingredients.

  • STEP 3

    Add dry to wet ingredients and blend until moistened.

  • STEP 4

    Stir in apples. Pour into loaf pan. Bake at 350° F (180° F) for 75 minutes.
