Delicious Peach Coffee Cake
Makes 12 Servings
2 cups (500 mL)fresh peaches*, peeled and diced
1/4 cup (175 mL) butter
1/2 cup (125 mL) packed brown sugar
2 eggs
2 1/2 cups (625 mL) all purpose flour
1 tsp (5 mL) baking soda
1 tsp (5 mL) baking powder
1/2 tsp (2.5 mL) salt
1 cup (250 mL) buttermilk
1 cup (250 mL) white chocolate chips
*frozen or canned peaches can be used when fresh are not available
1. Preheat oven to 350°F (180°C). Prepare a 9x13 inch pan.
2. In large bowl of electric mixer, cream butter and brown sugar. Beat in eggs.
3. In another bowl, combine flour, baking powder, baking soda and salt.
4. Add buttermilk and flour mixture, in 3 additions each, to the butter-sugar mix and blend well. Stir in peaches and white chocolate chips.
5. Pour into prepared pan and bake for 60-75 minutes, or until fork inserted into centre comes out clean.
