Salad Dressing Ingredients:
1/3 Cup Fresh squeezed orange juice
2 Tbsp Red wine vinegar
2 Tsp Sugar or honey
1 Tsp Dijon mustard
1 Clove garlic, crushed
¼ Cup Vegetable oil
½ Cup Quinoa (uncooked)
4 Cup Washed and torn packed kale
2 Tbsp Finely diced red onion
1 Large Ambrosia BC Tree Fruits apple, cored and diced
¼ Cup Roasted pumpkin seeds
½ Cup Toasted pecans, roughly chopped
¼ Cup Dried cranberries
1/3 Cup Crumbled feta cheese
Salt and pepper
1. Prepare the salad dressing by whisking all of the salad dressing ingredients together in a mason jar or wide large cup (you can also just shake the jar to mix it).
2. Cook the quinoa according to the package directions, fluff, and set aside to cool.
3. Place all of the salad ingredients in a bowl, toss with the dressing, add salt and pepper to taste and serve.
